INGREDIENTS
San Remo Pearl CousCous 250g
1 bunch asparagus, chopped
1 cup broad beans, outer skin peeled
after boiling
1 cup peas
1 / 3 cup chopped parsley
1 / 3 cup chopped dill

red onion, finely diced
80g Greek feta, crumbled
Salt and pepper
1 / 3 cup olive oil
1 / 4 cup lemon juice
1 / 4 cup chopped pistachios
METHOD
1. Prepare CousCous as per packet instructions. Once cooked, fluff with a fork
and set aside.
2. Meanwhile, place 2 cups of ice into a large bowl of water.
3. Add asparagus to the boiling water and simmer for 30 seconds, then remove
and place into the ice bath.
4. Repeat with broad beans and peas.
5. Strain vegetables and add to the CousCous with herbs, red onion and feta.
6. Season with salt and pepper and dress with olive oil and lemon juice.
7. Mix well and spoon into a serving bowl and sprinkle with pistachio.
8. Serve and enjoy with family and friends!
